Dinner doesn’t have to be a big cooking project to be satisfying.
When you’re living alone, preparing a simple meal at the end of the day often feels much more manageable than cooking something complicated.
I’ve found that the easiest dinners are usually the ones that are:
• familiar
• comforting
• quick to prepare
And that’s more than enough. Facing a heap of unwashed dishes is not what I want after dinner!
🍲 1. Simple One-Pot Meals
One-pot meals are one of the easiest dinner options because there’s less preparation and less cleaning afterward.
For me, a casserole dish or a crockpot meal is a winner. One dish to clean and you’re done.
Simple ideas include:
• soup
• pasta dishes
• rice with vegetables and chicken
Everything cooks together, which keeps things easy.
🍳 2. Breakfast-for-Dinner Can Work Too
There’s nothing wrong with having simple breakfast foods for dinner.
Meals like:
• scrambled eggs on toast
• an omelette
• oatmeal on colder evenings
can be quick, comforting, and filling.
Take a look at this simple omelette guide.
🧊 3. Use Leftovers to Make Dinner Easier
Dinner is often the best time to use leftovers from earlier meals.
A small portion of:
• soup
• casserole
• pasta
• roasted vegetables
can save a lot of effort at the end of the day.
I’ve found that cooking a little extra on good days makes difficult days much easier.
If you need some motivation to cook after 60 – here are some ideas.
🥪 4. Keep It Light When You Need To
Not every dinner needs to be heavy.
Sometimes a lighter meal is enough:
• toast with toppings
• soup with bread
• a sandwich with fruit
Simple dinners can still feel satisfying.
🪑 5. Make Cooking More Comfortable
If dinner preparation feels tiring, small adjustments can help.
Try:
• sitting while preparing food
• keeping cookware easy to reach
• using appliances that feel simple and reliable
A few small changes can make evenings feel much less stressful.
💛 A Gentle Reminder
There’s no perfect way to make dinner.
Some evenings you may feel like cooking.
Other evenings, something quick and simple is the better choice.
The important thing is finding meals that feel manageable for you.
