The problem comes when you still have to get through the afternoon on very little energy, and you start to feel run down and tired. Grabbing a store-bought snack, was one of my remedies, but it’s not a great idea. I ended up eating far too many calories, carbs, and unhealthy food additives.
That’s when I decided to take control and set up an easy, lazy lunch plan that I could follow without stress. It was a game-changer and took far less effort than I imagined.
Lunch doesn’t need to be complicated to be satisfying.
When you’re cooking just for yourself, the goal isn’t to prepare a big meal – it’s to have something simple, nourishing, and easy to put together.
Some days you may feel like making something warm.
Other days, something quick is more than enough.

If you are getting bored with store-bought bread, why not try some artisan breads like sourdough, a baguette, Ciabatta or Focaccia. They can really take a simple meal to the next level.

If you prefer something lighter, simple salads can work really well.
You don’t need anything complicated:
• a few chopped vegetables
• some cooked chicken or eggs
• a drizzle of dressing
Keep it basic – it still does the job.

On days when you want something warm, keep it easy.
Good options include:
• leftover soup
• a small portion of pasta
• reheated meals from the day before
You don’t need to cook from scratch every time.

Leftovers from dinner can save time and effort, and often taste even better the next day.
This is one of the simplest ways to make daily meals easier.
Some of my favorite leftovers are chicken and pasta. They really keep well in the fridge for at least one day, and can be used in a salad or a sandwich, for a quick meal.

Some days it might be:
• toast with something on top
• a small bowl of soup
• a simple snack-style plate
The goal is to eat something that works for you.
